White Chocolate Macadamia Blueberry Pumpkin Pastries

White Chocolate Macadamia Nut Pumpkin Blueberry Pastries

  • 1 package puff pastry sheets, thawed
  • 1 white chocolate macadamia cookie
  • 1 cup pumpkin puree
  • 1/3 cup blueberry pie filling
  • 1/3 cup sugar
  • 1 tbsp pumpkin pie spice
  • various other pie fillings of your choice


  1. Preheat your oven to 350 degree’s.
  2. Finely chop the white chocolate macadamia cookie into fine pieces.
  3. Add the chopped cookie to a large mixing bowl along with the pumpkin puree, blueberry pie filling, sugar and pumpkin pie spice. Mix everything together and set aside.
  4. Place the puff pastry sheet in front of you and cut the sheet into 4 equal squares.
  5. Place a spoonful of prepared filling onto the center of the puff pastry squares.
  6. In a small bowl whisk one large egg with 1 tablespoon of water together.
  7. Using a pastry brush, brush all the edges of the pastry with the egg wash to help them stick together.
  8. Shape the pastry as desired. You can shape them in triangles like turnover, fold all the points to the center of the pastry forming a square. Use your imagination and have fun with shaping your pastries.
  9. Once you have shaped the pastry place them on a parchment lined with parchment paper. Brush them with egg wash and and sprinkle with sugar.
  10. Place the prepared pastries in your preheated oven for about 30 minutes or until golden brown.
  11. Remove the pastries from the oven when baked. Place spoonfuls of prepared pie filling of your choice where applicable on the pastries.
  12. I drizzled an easy cream cheese frosting over the pastries to finish them. To make the frosting, simply whisk together 1 package cream cheese with about 2 cups powdered sugar and 2 tablespoons of can milk. Once the frosting is mixed, microwave the frosting until it warm enough to change to a liquid that can be drizzled over the pastries. Serve and Enjoy!
  13. On my tv show, I baked off some puff pastry shells until they were golden brown. Removed them from the oven and let them cool.
  14. Using a fork, I carefully removed the center section and filled the shells with my favorite prepared pie fillings and topped them with the center portion I removed as little hats.
