Vegetable Pasta

Ingredients:

  • 2 small zucchini, spiraled into pasta
  • 1 summer squash, spiraled into pasta
  • 4 garlic cloves, minced
  • 1 small onion, finely chopped
  • 1 - 14.5 oz. can diced tomatoes, juice and all, low sodium
  • 1 tbsp dried Italian seasoning herb blend
  • 1/2 cups shredded parmesan cheese
  • whole grain artisan bread
  • extra virgin olive oil

Directions:

  1. Use a spiraling machine to spiralize the zucchini and summer squash. Set aside.
  2. Heat a large sauté pan on the stove and add just enough extra virgin olive oil to lightly coat the bottom of the pan.
  3. Add the onion and garlic to the pan and sauté until fragrant. Add the squash noodles and gently sauté to heat them.
  4. Add the diced tomatoes and Italian seasoning to the vegetable pasta, bring to a simmer and remove from the heat.
  5. Transfer the mixture to a large platter and sprinkle with shredded parmesan cheese. Serve with your favorite whole grain artisan bread and enjoy!
