Twisted Coffee Cake

Ingredients:

1 tbsp yeast
1 can evaporated milk
¼ cup butter melted
2 tablespoons sugar
1 teaspoon salt
3 to 3 ½ cups flour
2 beaten eggs

Directions:

  1. Add the water, milk, yeast, sugar, eggs, and melted butter to a mixing bowl.
  2. Add one cup of flour and the salt and mix together.
  3. Continue adding enough of the flour to pull the mass into a soft dough.
  4. Knead for 5 minutes.
  5. Place the freshly made dough into a well greased bowl, grease the top of the dough, cover with plastic wrap and let double in size.

Assembly:

  1. Once the dough has doubled in size, weigh out sixteen 2-ounce pieces (twelve pieces for the points and four pieces for the center of the star).
  2. Roll twelve pieces into 12-inch strings.
  3. Bend each string in a upside down V-shape and place them, overlapped, on a paper-lined sheet pan in a wreath shape with the ends pointing out. Space each string one-third of the distance between the two halves of the previous string; when you add the last one, place one side under the first string
  4. Divide into six sections of four strings each. Number the strings going from left to right 1, 2, 3, 4. This is the braiding formula. Braid 4 over 3, braid 2 over 3, braid 1 under 2; repeat from the beginning.
  5. As you come to the end of each braid, pinch the ends together and tuck underneath. If the opening in the center becomes too large, move the sections closer together after you have finished braiding.
  6. Roll the remaining four pieces into 36-inch strings. Do this in sequence to give the gluten a chance to relax otherwise, the dough will spring back on you and won’t roll out.
  7. Place them next to each other and cut in half and then cut in half once again. You will have a total of 16 strings approximately 7 inches long.
  8. Place them next to each other and braid, following the preceding directions for the braiding. Start braiding from the center out to one end. Then turn the braid around and finish braiding from the center out and pinch each end together.
  9. Pick up the braid with both hands and push the two ends under so that you form a round loaf.
  10. Place the loaf in the center opening of the star and brush the new starburst with an egg wash.
  11. Let rise until slightly less than doubled in volume.
  12. For a good shine, brush a second time with egg wash.
  13. Bake at 375F degrees until golden brown, about 40 minutes.
  14. Drizzle with your favorite jam and confectioner icing. Recipe below.

Confectioner Icing:

  • 2 cups powder sugar
  • ¼ cup milk
  1. Add all ingredients in a bowl and mix until combined.
