Trail Mix Squares

Ingredients:

  • 4 cups puff rice cereal
  • 2 cups trail mix, use your favorite one
  • 1/2 cup shredded coconut
  • 1 cup craisins
  • 1 cup chopped walnuts
  • 1 16 oz bag miniature marshmallows
  • 4 tbsp butter
  • 1 tsp vanilla
  • vegetable spray

Directions:

  1. In a large bowl, add the puff rice cereal, trail mix blend, shredded coconut, craisins, and chopped walnuts. Mix everything together to combine.
  2. Generously spray a baking sheet with vegetable spray and set aside.
  3. In a large microwave safe bowl, add the marshmallows, butter and vanilla. Since every microwave is different, melt the marshmallows on 30 second intervals until they are fully melted. Be sure to stir to incorporate the butter and vanilla.
  4. When the marshmallow is fully melted, pour it over the puff rice cereal mixture. Using a large spoon, fold the melted marshmallow and puff rice cereal mixture together. You will need to move quickly because the marshmallow cools quickly. If you were unable to get everything blended, simply preheat your oven to 200 degree’s and place the bowl with the mixture in the oven for about 10 minutes to warm it up enough to finish combining everything.
  5. Transfer the marshmallow mixture to your prepared baking sheet. Spray your hands with vegetable spray and gently press the mixture into the baking sheet evenly. Let the mixture cool and set for about 1 hour before cutting into squares. Serve and Enjoy!
