Super Greens Salad with Steamed Chicken Breasts

Ingredients:

  • 6 cups mixed super greens
  • 1/2 cup chopped sun dried tomatoes in oil
  • 1 1/2 cups blueberries
  • 2 chicken breasts cut in half horizontally
  • extra virgin olive oil
  • rice vinegar
  • salt and pepper to taste

Directions:

  1. Place the prepared chicken breasts into a steamer. Sprinkle with salt and pepper and steam the chicken breasts until they are fully cooked. Depending on the steamer, times will vary so adjust accordingly. I have a rice cooker that has a steamer basket that I like to use.
  2. While the chicken breasts are steaming, add the mixed greens, chopped sun-dried tomatoes and blueberries to a large bowl. Toss to combine. Drizzle lightly with extra virgin olive oil and rice vinegar to taste. Sprinkle with salt and pepper and toss to combine.
  3. When the chicken breasts are fully cooked, remove them from the steamer, being careful not to burn yourself.
  4. Place them on a cutting board and slice into thin slices.
  5. Place the prepared salad greens on a large platter and top with the sliced chicken breasts.
  6. Serve with artisan sourdough bread and enjoy!
