Sour Dough Waffles with a Sour Cream Caramel Sauce

Sour Dough Waffles with a Sour Cream Caramel Sauce

Ingredients:

  • 4 eggs
  • 1 cups sugar
  • 8 tbsp butter
  • 4 cups flour
  • 2 tbsp baking powder
  • 2 tsp salt
  • 1-2 cups milk
  • 2 cups sourdough start

Directions:

  1. Add the eggs to your mixer and with the whisk attachment, whisk the eggs into a medium meringue. I generally do this on high.
  2. Turn the machine down to a medium speed and slowly add the sugar into the meringue to help stabilize it.
  3. In a separate bowl, whisk the flour, baking powder and salt together.
  4. Melt the butter and change the whisk attachment to the paddle attachment. Alternate adding the melted butter, flour and milk to the meringue mixture on slow speed. Mix until everything is incorporated and you have a velvety smooth batter. The amount of milk will vary so you want the batter to look like a thick version of a cake batter.
  5. Remove the mixing bowl from the machine and fold in the sour dough start (check out my sour dough pizza crust recipe for instructions on making your sourdough start) until completely incorporated. Let the batter sit for about 15 minutes before using.
  6. I like to add fruit either to the batter after I've poured the recommended amount into my waffle maker or you can also mix your favorite jam into the batter if you choose.
  7. Follow the waffle maker directions for cooking. Once cooked, remove and top with my Sour Cream Caramel Sauce (recipe below), whipped cream and fruit. Serve and Enjoy!

Sour Cream Caramel Sauce

Ingredients:

  • 1 cup sour cream
  • 1 cup sugar
  • 2 tsp vanilla
  • 2 tsp baking soda
  • 1 tsp salt

Directions:

  1. Add the sour cream and sugar to a heavy bottom sauce pan. Begin cooking on low for about 10 minutes or until the sour cream melts and combines with the sugar.
  2. Increase the heat to medium and continue watching and gently stirring for about 15 minutes. The mixture will burn if you don’t gently stir it.
  3. Mix the vanilla, baking soda and salt together in a small bowl.
  4. After about 10-15 minutes add the vanilla mixture to the sour cream and sugar. Remove from the heat and rapidly stir the mixture all together. It will foam so make sure you are using a pan large enough to accommodate it.
  5. The sauce will turn brown like caramel. Remove from the heat and use as needed. Enjoy!
