Salmon Bake with “Baby” Bok Choy

  • 4 salmon fillets
  • 2-3 large russet potatoes, peeled and thinly sliced
  • 6 “baby” bok choy
  • 1 large onion cut into wedges
  • 1 tsp tarragon
  • zest from one lemon
  • juice from one lemon
  • olive oil
  • salt and pepper


  1. Cut the “baby” bok choy in half and completely rinse to remove any unwanted dirt. Place the cleaned bok choy, sliced potatoes and onion wedges into a large bowl and drizzle with olive oil. Toss to coat with olive oil. Salt and pepper to taste.
  2. Spray a 9x13 baking dish and line it with the thinly sliced potatoes. Arrange the bok choy and onion on top of the potatoes.
  3. Sprinkle the salmon fillets with tarragon, lemon zest, lemon juice salt and pepper.
  4. Arrange the prepared salmon fillets on top of the potatoes and among the prepared bok choy and onions.
  5. Place the dish into a 350 degree oven and bake for 30 minutes or until the salmon and potatoes are cooked. Serve and Enjoy!
