Rustic Italian Soup

Rustic Italian Soup

Ingredients:

  • 3 bell peppers, de-seeded and sliced
  • 2 tbsp extra virgin olive oil
  • 1 can Italian diced tomatoes (14.5 ounce can)
  • 1 3/4 cups chicken broth
  • 1 can navy beans (15.5 ounce can)
  • 3 tbsp freshly chopped basil
  • 2 tbsp freshly chopped parsley
  • 1 tbsp freshly chopped oregano
  • 1 tbsp balsamic vinegar
  • 2 medium garlic cloves, minced
  • 1/4 tsp crushed red pepper flakes (or to taste)
  • salt and pepper to taste

Directions:

  1. Combine all of the ingredients in your blender including the liquid from the tomatoes and the navy beans. Blend the mixture until smooth.
  2. Transfer the pureed soup mixture to a large pot and simmer for about 20 minutes. Stir every so often to make sure nothing is sticking to the bottom of the pot.
  3. Serve the soup in a sourdough bread bowl and finish off with a sprinkling of your favorite Italian herb blend. Enjoy!
