Roasted Garlic and Ranch Sourdough Knots

Roasted Garlic and Ranch Sourdough Knots

Ingredients:

  • 2 cups sourdough starter
  • 6 cups flour
  • 2 cups water
  • 1/2 cups olive oil
  • 2 tsp salt
  • 1 cube butter
  • 1/2 cup roasted garlic, minced
  • 1/4 cup dried parsley
  • 1 tbsp coarsely ground pepper

Directions:

  1. To the bowl of your mixer add the sourdough start (see below for recipe), flour, water, olive oil and salt. Mix everything together and knead for a good 15 minutes.
  2. When the dough is finished kneading, remove and place in an oiled bowl, spray the top with vegetable spray, loosely cover and let the dough double in size. If you don’t want to make your own rolls, use a frozen prepared roll dough like Rhodes Bake and Serve rolls.
  3. Bake the knots in a preheated 350 degree oven for about 25 minutes or until they are cooked through and just turning brown. If you want the rolls to golden brown on top, brush them with an egg wash just before you place them in the oven. (Recipe for any egg wash is below.)
  4. Once the knots are cooked through and brown remove them from the oven and let them cool.
  5. Meanwhile, melt 1 cube of butter (8 tbps.) in a large sauté pan and add the minced roasted garlic and dried parsley. Sauté together until it is very fragrant (about 1 minute).
  6. Pour the butter mixture into a large bowl, add the baked sourdough knots into the butter mixture and toss to coat.
  7. Serve the roasted garlic and ranch sourdough knots with your favorite dinner or serve them as an appetizer. If serving them as an appetizer, size down the knots so they are smaller than a dinner size roll.

Sour Dough Starter

Ingredients:

  • 2 cups flour
  • 2 cups water
  • 1/2 tsp yeast

Directions:

  1. Mix all the ingredients together in a large mixing bowl until combined.
  2. Loosely cover and let the mixture sit out on your counter for 24 hours.
  3. After 24 hours, store the start in the refrigerator until needed. Make sure the container is NOT airtight.

Egg Wash

Ingredients:

  • 1 egg
  • 1 tbsp water

Directions:

  1. Whisk the egg and water together in a small mixing bowl. Using a pastry brush, brush the egg wash on your desired baked goods.
