Quinoa Chopped Salad

Quinoa Chopped Salad

Ingredients:

  • 1 head iceberg lettuce
  • 3 tomatoes
  • 1 cucumber, peeled
  • 1 bunch green onions
  • zest and juice from one lemon
  • 4-6 leaves of mint, finely chopped
  • 3 cups cooked quinoa
  • 1 red bell pepper, seeded and chopped
  • 1/2 cup chopped red onion
  • 1 bunch parsley
  • 1/3 cup extra virgin olive oil
  • salt and pepper to taste
  • artisan bread

Directions:

  1. Chopped the iceberg lettuce into bite size pieces. Rinse and dry.
  2. Chop the tomatoes, cucumber and green onions.
  3. Toss the chopped lettuce, tomatoes, cucumbers, green onions, zest of one lemon, chopped mint leaves, and cooked quinoa together.
  4. In the bowl of your food processor add the bell pepper, red onion, parsley, extra virgin olive oil and juice of one lemon.
  5. Pulse the ingredients in the food processor together until well combine. Pour over the salad and fold together.
  6. Serve with your favorite artisan bread and enjoy!
