Pumpkin Cookies with Cream Cheese Frosting

Ingredients:

  • ¼ cup softened butter
  • ¼ cup shortening
  • 1 cup brown sugar
  • ½ cup sugar
  • 2 eggs
  • 1 tsp baking soda
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 tbsp vanilla
  • 1 tsp ground ginger
  • 1 tbsp cinnamon
  • 1 tsp ground nutmeg
  • 1 cup pumpkin puree
  • 2 ½ cups flour

Directions:

  1. Preheat oven to 350 degree’s.
  2. In a large mixing bowl, add the butter, shortening, and sugar. Cream together for 3 minutes.
  3. Add the eggs and mix to incorporate.
  4. Add baking soda, baking powder, vanilla, ground ginger, cinnamon, ground cloves, and ground nutmeg. Mix to blend ingredients together.
  5. Add pumpkin puree and mix ingredients together.
  6. Add flour and mix for 3 minutes until batter is smooth. Be sure to scrape sides of mixing bowl to ensure all ingredients are well blended. If desired, add your favorite add-ins like chocolate chips, nuts etc.
  7. Spoon drop cookies onto a prepared baking sheet and bake for 8-12 minutes or until done. The total cookie time will depend on the size of your cookies.

Cream Cheese Filling

Ingredients:

  • 1 pkg soften cream cheese
  • ½ cup sugar
  • 1 tbsp vanilla

Directions:

  1. Mix all together and set aside until ready to use.
