Pre-Game Pasta Dinner

Ingredients:

  • 1 medium spaghetti squash
  • 1 large onion diced,
  • 3 garlic cloves, minced
  • 4 tbsp butter
  • 2 pounds lean ground hamburger
  • 3-4 cups prepared pasta sauce
  • 1 tsp red pepper flakes
  • 1 tsp chilli powder
  • 1/2 tsp cayenne pepper (to taste)
  • salt and pepper to taste

Directions:

  1. Cut the spaghetti squash in half lengthwise and scoop out the seeds and pulp.
  2. Place the squash on a baking dish and loosely cover with aluminum foil. Bake in a 350 degree preheated oven for about 30 minutes or until the squash is fork tender.
  3. While the squash is cooking, preheat a large sauté pan a add about 4 tbsp of butter.
  4. Add the diced onion and garlic to the sauté pan. Sauté the onion and garlic until it’s very fragrant. Add the ground hamburger and cook. Make sure the hamburger is fully cooked.
  5. Add your prepared pasta sauce and gently stir to combine the sauce ingredients together. Add the red pepper flakes, chili powder and cayenne pepper to the sauce, stir to combine. Reduce to a simmer and simmer for about 5 minutes.
  6. When the squash is fork tender, remove from the oven and let it stand until it is cool enough to handle. Using a large spoon scoop the spaghetti squash onto a large platter and top with the prepared pasta sauce. If desired, sprinkle with freshly chopped parsley and grated parmesan cheese. Enjoy!
