Pork Dumplings and Carrot Salad

Ingredients:

  • 1 pork roast fully cooked or left over roast
  • 1/3 cup diced red onion
  • 1/3 cup prepared teriyaki sauce
  • Frozen dinner rolls, thawed
  • 4-5 large carrots, washed and peeled if needed
  • 1-2 apples, cored and diced
  • juice of one lemon
  • 2 tsp salt or to taste
  • 2 tsp black pepper or to taste
  • olive oil

Directions:

  2. When I make my pork dumplings, I like to use left over pork roast from dinner. Start by heating a large sauté pan on the stove. Add enough olive oil to lightly coat the bottom of the pan.
  3. Add the diced onion and sauté until fragrant.
  4. Shred up the pork if it isn’t already, and add it to the pan with the teriyaki sauce. Sauté everything together until well combined.
  5. To assemble the pork dumplings: depending on how large you would like the dumplings, you may need to combine two dinner rolls into a larger dough mass. I used Rhodes Dinner Rolls and combined two of the dinner rolls to make a larger dumpling.
  6. Roll out the dough into 4-5 inch rounds. Stuff each round with about 1/4 cup or the sautéed teriyaki pork mixture.
  7. Close the dumpling by bringing all of the edges together and place it seam side down in a bamboo steamer, steam oven or any other type of steam device you may have. If you don’t have a steamer, place them seam side down on a baking sheet that has been sprayed with vegetable oil. Bake at 350 degree’s for about 20 minutes or until they just begin to brown.
  8. Serve with teriyaki sauce on the side or your favorite sauce. Enjoy!
  9. To make the carrot salad: Use the shredding blade on your food processor and shred the carrots.
  10. Add the shredded carrots to a large bowl along with the diced apple.
  11. Squeeze the juice of one lemon over the salad, sprinkle with salt and pepper, toss to combine. Serve for a delicious side with your dumplings.
