Picadillo Mexicano


Recipe Courtesy Frida Bistro

Ingredients:

  • 2 cups of tomato chicken broth
  • 1 carrot cut into cubes
  • 3/4 cups water
  • 2 tbsp roasted jalapeño’s
  • 1/4 cup chopped white onions
  • 1 bay leaf
  • 2 tbsp cooking oil
  • 1 pound of ground beef
  • 1/2 cup of peas
  • 1 ripe Roma Tomato
  • 1 medium potato, cut into cubes
  • 1 garlic clove, minced

Directions:

  1. Heat the oil in a pot and sauté the onion.
  2. Add potatoes, carrots and fry them for 2 minutes. Saute ground beef until it is browned.
  3. For the chicken broth; blend the tomato with water and garlic, strain and pour into the pot of meat.
  4. Add the peas, chicken broth and the bay leaf.
  5. Cover and let it cook 10 more minutes over low heat.
  6. Season with salt and pepper to taste.
