Raisin Cookies

Old Fashioned Raisin Filled Cookies

Cookie Dough:

  • 2 cups brown sugar
  • 1 cups shortening
  • 1/2 cup buttermilk
  • 2 eggs, whisked
  • 1 tsp vanilla
  • 3 1/2 cups flour
  • 1 tsp soda
  • 1/2 tsp salt


  • 1 cup raisins
  • 1 cup golden raisins
  • 1 cup dried dates
  • 1 cup dried apricots
  • 1 cup walnuts
  • 1 cup sugar
  • 1 cup water


  1. To make the dough, cream the brown sugar and shortening together for about 3 minutes.
  2. Add the buttermilk, eggs and vanilla. Mix everything everything together until well combined.
  3. In a separate bowl whisk the flour, soda and salt together to combine. Add the flour mixture to the wet ingredients and blend together until everything is well combined.
  4. To make the filling, add the raisins, golden raisins, dried dates, apricots and walnuts to your food processor bowl and pulse the ingredients together until they are well chopped.
  5. Add the chopped fruit mixture to a large sauce pan and add the sugar and water to the sauce pan. While stirring, cook the mixture for about 5 minutes or until it thickens. Remove from the heat and let the raisin filling cool completely before assembling the cookies.
  6. To assemble the cookies, Remove the dough from the mixer and divide in half. Roll half the dough out on a floured work surface to about 1/2 inch.
  7. Using a round cookie cutter, cut as many rounds as out of the cookie dough as possible. Remove the excess dough from from the rounds and set aside.
  8. Place the cut out cookie rounds on a prepared baking sheet (either lined with parchment or a Silpat).
  9. Place a spoonful of prepared filling into the center of the cookie rounds.
  10. Roll out the second part of the dough and cut out enough cookie rounds to place them on top of the other cookies with the filling.
  11. Gently press the top cookie over the filling to spread it out and gently press the edges together to seal the cookies halves together.
  12. Place the cookies into a preheated 350 degree oven for about 12-15 minutes or until golden brown. Remove from the oven and let the cookies cool.
  13. If you would like to make raisin cookies, simply mix the dough with the prepared raisin filling until combined. Drop the cookies onto a prepared baking sheet and bake in a 350 degree oven fro 12-15 minutes or until golden brown. Remove from the oven and let the cookies cool completely before serving. Enjoy!
