Old Fashioned Custard

Ingredients:

  • 6 egg yolks (plus 2 whole eggs if desired)
  • 4 cups milk
  • 1/2 cup sugar
  • 2 tsp vanilla
  • 1 tsp fresh lemon juice
  • 1 tsp salt
  • dried fruit of choice (if desired)
  • grated nutmeg

Directions:

  1. Whisk the eggs yolks together in a large bowl. If you like a custard with a firmer texture, add two whole eggs and whisk in with the yolks.
  2. Stir the milk, sugar, vanilla and lemon juice together. If you would like more lemon flavor, add 1 tsp lemon zest to the milk. Bring the milk to a boil while constantly stirring.
  3. Once the milk has come to a boil, remove from the heat and slowly pour the hot milk mixture into the yolks while whisking together. This is the tempering process for the eggs.
  4. Add the tempered egg and milk mixture to your custard dishes of choice.
  5. If adding dried fruit like raisins, lightly toss the dried fruit in flour and add to the tempered egg mixture.
  6. Place the custard dish into a larger baking pan and fill the baking pan about 1/2 way with water. I use a cake pan so it will hold about 1-2 inches of water. Be sure to keep an eye on the water and do not let it boil dry.
  7. Sprinkle the top of the custard with nutmeg. Use as much or as little as you would like. You could also use cinnamon too.
  8. Loosely place a cover over the custard baking dish and place in a preheated 300 degree oven.
  9. Bake the custard for approximately 1 1/2 - 2 hours or until the custard when tapped moves like set gelatin. Baking times will vary depending on the size of the custard baking dishes so adjust time accordingly.
  10. Once the custard is cooked, remove from the oven and let it cool to room temperature. When the custard has cooled, refrigerate until chilled. Serve will fresh berries and enjoy.
  11. If desired, build individual parfaits by combining the custard, fresh berries and pieces of your favorite sponge cake. On air, I used a homemade angel food cake.
  12. Serve and enjoy!
