Lemon Fluff

Ingredients:

  • 12 graham cracker squares
  • 1 pkg lemon gelatin dessert
  • 3/4 cup boiling water
  • 1 cup sugar
  • 1 lemon, juiced
  • 1 can evaporated milk, completely chilled

Directions:

  1. Place the graham crackers in a large sealable plastic bag. Using a rolling pin, crush the crackers to a fine crumb. Pour three quarters of the graham cracker crumbs into a 9x13 baking dish and make sure it covers the bottom of the pan. Reserve the other portion of Graham Cracker crumbs to dust the top of the Lemon Fluff.
  2. Place a large mixing bowl in the refrigerator 20 minutes before making dessert.
  3. Dissolve the lemon gelatin dessert and sugar in the boiling water. Remove from the heat and let the mixture cool to room temperature, but not set.
  4. In a chilled mixing bowl, whisk the chilled evaporated milk until light and frothy.
  5. Add the gelatin mixture and juice from one lemon to the whipped milk and beat together until well blended.
  6. Pour the whipped mixture over the prepared graham cracker crumbs in the 9x13 pan. Place the dessert into the refrigerator for at least 2 hours to allow the gelatin to set.
  7. Just before serving, sprinkle the remaining graham cracker crumbs over the lemon fluff. Cut into serving potions, serve and enjoy!
