Japanese Style Ramen

Ingredients:

  • 2 pkg ramen noodles
  • 2 eggs
  • 4 large carrots, peeled and sliced
  • 1 cup chopped mushrooms
  • 10-12 thinly sliced pieces of roast beef
  • 2 cups packed spinach
  • 1 package extra firm tofu, cut into bite size pieces

Directions:

  1. Add four cups of water to a large frying pan. Add the ramen noodles, eggs, prepared carrots, mushrooms, thinly sliced roast beef, spinach and cut tofu.
  2. Bring to a boil and reduce to a simmer.
  3. Add the ramen seasoning. Continue simmering until the ramen noodles are cooked. I do like to stir this soup with chop sticks.
  4. Once the ramen noodles are cooked, transfer evenly between 4 soup bowls. Serve and enjoy!
