Huevos Ranchero

  • 1 pound carne asada ( )
  • 2 cups dry black beans (about 1 pound)
  • 6 cups water
  • 1 cup chopped bacon
  • 6 cups arugula
  • Queso fresco ( )
  • Corn Tortillas
  • Prepared Salsa
  • Eggs
  • Salt and pepper to taste
  • Vegetable oil
  • Bananas
  • Ripe Avocados
  • 4 cups milk
  • sugar to taste


  1. On air, I prepared the tortillas 3 different ways to show how versatile this dish can be. I heated a saute pan with about 1/2 inch vegetable oil enabling me to deep fry the tortilla like a tostada. We also charred the tortilla place placing it directly on a gas burning until the edges were charred and lastly I simply pan fried the tortilla.
  2. To make the beans, saute the chopped bacon in your pressure cooker. While the bacon is cooking rinse and pick through the beans making sure they are clean and no little rocks are present.
  3. Add the prepared beans into the cooking baking and pour the water over the beans. Season with Salt and pepper to taste, close the pressure cooker. Once the pressure cooker has come to pressure, cook for approximately 20-25 minutes.
  4. After about 25 minutes, release the pressure according to the manufacturer of the pressure cooker and test the doneness of the beans. If the beans aren’t quite cooked through, just simmer them in the bottom portion of the pressure cooker until they reach the desired doneness.
  5. To fry the egg, heat your saute pan and add about a 1/2 inch of oil into the bottom of the pan.
  6. When the oil is hot, carefully crack the egg into the hot oil. Using a spoon, carefully spoon the hot oil over the egg to lightly cook the top of the egg. Remove the cooked eggs with a large slotted spoon or spatula and place the eggs on a plate until ready to assemble the huevos rancheros.
  7. To assemble the huevos rancheros, prepare the corn tortilla as you choose. Ladle or spoon enough cooked beans over the prepared tortilla to coat the tortilla. Place a handful of arugula over the beans and gently place the fried egg on top of the arugula.
  8. Spoon your favorite salsa (on air we used Salsa Queen salsa) over the egg and sprinkle with queso fresco. Serve with a slice of avocada, sliced carne asada and finish with a squeeze of lime juice. Enjoy!
