How to Roast A Whole Chicken

Recipe Courtesy Chef Bryan Woolley

  • 1 whole roaster chicken
  • 1/3 fresh rosemary leaves
  • 1/4 cup fresh sage leaves
  • 1/4 cup no salt seasoning blend
  • 1/4 cup diced onion
  • 1 tbsp season salt
  • 1 tbsp black pepper
  • 4 tbsp butter
  • 2 pounds Klondike Gourmet Medley potatoes
  • 6-8 whole carrots

  1. Preheat your oven to 350 degree’s.
  2. Line a baking sheet with aluminum foil and spray with vegetable spray.
  3. Place the whole roasting chicken on the baking sheet and place the vegetables around the chicken.
  4. In bowl of your food processor, combine the fresh rosemary, sage, no salt seasoning, onion, salt, pepper and butter. Pulse everything together to combine.
  5. Rub the compound butter all over the chicken.
  6. Place in your preheated oven and roast the chicken until the internal temperature of the chicken “armpit” reaches at least 165 degree’s. Insert the thermometer and be sure it’s only in the meat and not touching the bone.
  7. Remove the chicken from the oven and let it rest for 10 minutes before cutting.
  8. Carve the chicken as desired, serve with the roasted Klondike Potatoes, vegetables and any other side dishes you enjoy!
