Herbed Zucchini Cheese Bread

1 loaf artisan french bread
2 small zucchini, shredded
1 cup mayonnaise
1/2 cup plain greek yogurt
1/4 cup freshly chopped chives
1/4 cup freshly chopped basil
1/4 cup freshly chopped parsley
1 cup shredded parmesan cheese
1 cup shredded mozzarella cheese
1 tsp onion powder
1 tsp garlic powder
1 tbsp black pepper
1 tsp salt


1. Slice the artisan french bread in half lengthwise and set aside.
2. After you shreds the zucchini, wrap it in several paper towels to help absorb excess moisture.
3. In a medium size bowl, add the prepared zucchini and the remaining ingredients. Using a large spoon, carefully fold everything together to combine.
4. Divide the zucchini mixture between the two halves of artisan french bread and place the prepared herbed zucchini cheese bread on a baking sheet.
5. Preheat the broiler on your oven and adjust your oven racks as necessary.
6. Place the herbed zucchini cheese bread under the broiler and broil until the cheese has melted and the mixture is bubbling and beginning to turn a golden brown.
7. Being careful not burn yourself, remove the bread from under the broiler and let it rest for about 5 minutes before slicing it. Broilers are not all created equally, so be sure to never leave a broiling food unattended for any period of time and follow all guidelines of from you oven manufacturer.
8. Serve the Herbed zucchini cheese bread with your favorite soup or dinner. Enjoy!
