Food Storage Fruit Cake

Ingredients:

  • 1 quart bottled fruit, juice and all
  • 2 cups sugar
  • 1/2 cup vegetable oil
  • 2 eggs
  • 4 cups flour
  • 4 tsp baking soda
  • 2 tsp cinnamon
  • 1 tsp nutmeg
  • 1/2 tsp ground cloves
  • 1/2 tsp salt
  • 2 cups raisins
  • 1 cup chopped walnuts
  • 1 cup chocolate chips

Directions:

  1. Preheat your oven to 350 degree’s Fahrenheit.
  2. Spray a cake pan (9x13) with vegetable spray and set aside.
  3. In your blender combine the fruit (and juice), sugar, vegetable oil, eggs, flour, baking soda, cinnamon, nutmeg, ground cloves and salt. Blend everything together until well blended.
  4. Pour the mixture into a large bowl and fold in the raisins, walnuts and chocolate chips until blended.
  5. Transfer the cake batter to your prepared cake pan and place it in your preheated oven.
  6. Bake the cake for approximately 45 minutes or until a toothpick comes out clean in the center. Remember every oven is different so adjust baking time as needed. Serve and Enjoy!
