Coconut Curry Chicken

2 large chicken breasts cut into bite size cubes
1 tbsp curry powder
1 cup diced onion
2 garlic cloves, minced
1 cup coconut milk
1/3 cup sun dried tomatoes, diced
2 cups stewed tomatoes (more or less)
cooked rice
vegetable oil
salt and pepper

Heat a large skillet on the stove and add enough vegetable oil (if using sun dried tomatoes in oil, use the oil from the tomatoes rather than vegetable oil) to lightly coat the bottom of the pan.
Add the onion, curry powder and garlic; cook until very fragrant.
Add the chicken and sun dried tomatoes. Cook the chicken until cooked through (about ten minutes).
Add the stewed tomatoes and coconut milk, simmer for 10-15 additional minutes.
Salt and pepper chicken to taste and serve over rice. Add your favorite vegetable for a complete dinner. Enjoy!
