Classic Macaroni and Cheese

  • 1-2 pounds elbow macaroni

  • 1/2 stick unsalted butter

  • 1/4 cup all-purpose flour

  • 1 1/2 cups finely chopped onion

  • 2 large garlic cloves, minced

  • 4 cups milk

  • 1 1/2 cups coarsely grated extra-sharp Cheddar
  • salt and pepper to taste


  1. Cook the elbow macaroni according to the directions on the package.
  2. While the macaroni is cooking, Heat a large heavy bottom pot on the stove and add the butter. Allow the butter to melt and than add the onion and garlic. Sauté the mixture until fragrant.
  3. Sprinkle the onion mixture with flour and stir everything together for about 1-2 minutes.
  4. Add the milk in a stream, whisking, bring the liquid to a boil while. Simmer the mixture for about 2 minutes while stirring. Salt and pepper to taste.
  5. Add the shredded Sharp Cheddar Cheese and stir until the cheese has melted and the cheese sauce is smooth and creamy.
  6. When the macaroni is cooked, drain and transfer back to the pot you were cooking it in. Pour the cheese sauce into the cooked macaroni and gently fold the mixture together. Salt and pepper to taste. Serve with you favorite protein and vegetable dishes and enjoy!
