Chopped Salad with Passion Fruit Vinaigrette

Chopped Salad with Passion Fruit Vinaigrette

Ingredients:

  • 4 cups chopped lettuce (use a variety of lettuce)
  • 2-3 red bell pepper chopped
  • 1 bunch green onions chopped
  • 2 cups chopped mushrooms
  • 1 medium sized cucumber, peeled, de-seeded and chopped
  • 1 bunch fresh parsley
  • 1 cup chopped artichoke hearts
  • 1 cup shredded cheese (can use more if needed)
  • 1 tsp freshly chopped thyme
  • 1/4 cup freshly chopped dill
  • 1 tbsp freshly chopped oregano
  • 1 avocado, sliced
  • 1/2 cup passion fruit vinaigrette (recipe below)
  • salt and pepper

Directions:

  1. Combine all of the ingredients onto a large plater in layers. By doing it this way, everyone will be able to enjoy all of the salad ingredients.
  2. Top the salad with shredded cheese and avocado slices
  3. Drizzle with passion fruit vinaigrette.
  4. Salt and pepper to taste. Serve and Enjoy!

Passion Fruit Vinaigrette

Ingredients:

  • 3-4 passion fruit, pulp only
  • 1/2 cup Jack fruit (optional)
  • 1/4 cup apple cider vinegar
  • 2/3 cup extra virgin olive oil
  • 1 tbsp sugar
  • salt and pepper to taste

Directions:

  1. Place everything in your blender and blend until smooth. Don’t worry about the seeds in the passion fruit, they will be small enough to eat.
  2. Reserve the vinaigrette in the refrigerator until ready to use. Enjoy!
