Chinese Chicken Salad

Chinese Chicken Salad

Ingredients:

For the Salad:

  • 1 cabbage head, shredded
  • 1 head iceberg lettuce shredded
  • 2 cups chopped celery
  • 2 cups spinach
  • 2 cups shredded carrots
  • 1/4 cup chopped cilantro
  • 1 bunch green onions, chopped
  • 1/4 cup freshly chopped mint
  • 1 cup roasted peanuts
  • 1 cup Mandarin oranges, drained
  • 2 cups cooked and shredded chicken breast

For the Dressing:

  • 1/2 cup rice vinegar
  • 2 tbsp peanut butter
  • 1 tbsp grated ginger
  • 1 tbsp adobo sauce
  • 2 chipotle peppers
  • 2 tbsp soy sauce
  • 1 tsp sesame oil
  • 1/4 cup canola oil
  • 1 tbsp honey

Directions:

  1. Combine everything for the salad in a large bowl and toss. Set aside until ready to use.
  2. For the dressing, combine dressing ingredients in the bowl of a food processors. Puree the dressing for about 1 minute or until well combine.
  3. When ready to serve, toss the dressing with the salad and serve. Season with salt and pepper, if needed and Enjoy!
