Chili Cheese Stuffed Mushrooms

Chili-cheese Stuffed Mushrooms

Ingredients:

  • 24 medium bottom mushrooms (about 1 pound)
  • 4 oz can of chopped green chilies, drained
  • 1/2 cup shredded, low fat sharp cheddar cheese
  • cooking spray

Directions:

  1. Preheat your oven to 400 degree’s. Line a baking sheet with aluminum foil.
  2. Remove the mushroom stems and place the mushrooms with the stem side down on the foil. Lightly spray the mushrooms with cooking spray.
  3. Bake for 10 minutes.
  4. Transfer to the baking sheet to a cooling rack.
  5. Place the can of green chilies, shredded cheese and mushrooms stems in your food processor and pulse to combine.
  6. Turn the cooled mushrooms over and fill each mushroom cap with the green chili mixture.
  7. Bake for 5 minutes or until the cheese has melted. Remove from the oven and let stand for about 3 minutes to cool. Serve and enjoy! I like to serve them with a dollop of Ranch dressing on top. Of course the Ranch dressing isn’t part of the Heart Associations recipe.
