Chicken and Sourdough Waffles

Ingredients:

For the Chicken:

  • 2 cups milk
  • 4 eggs
  • 6-8 pieces of chicken
  • 2 cups self rising flour
  • 1/3 salt-free seasoning blend
  • 1/3 cup chickening seasoning blend (your choice)
  • 2 tbsp coarse ground pepper
  • 1 tbsp salt
  • 2 tsp chili powder
  • 1 tbsp paprika

For the Sourdough Waffles:

  • 4 cups sourdough start
  • 2 tsp yeast
  • 4 eggs
  • 1/3 cup sugar
  • 1 cup milk
  • 1/3 cup extra virgin olive oil
  • 2-3 cups self rising flour (approximately)
  • 1 tbsp salt

For the Sourdough Start:

  • 4 cups flour
  • 4 cups water
  • 1 tsp yeast

Directions:

  1. To make the chicken, mix the milk and eggs together in a large mixing bowl and set aside until ready to use.
  2. In a large resealable bag, mix the self rising flour, salt-free seasoning blend, chicken seasoning blend, ground pepper, salt, chili powder, and paprika. Shake to combine everything.
  3. When frying the chicken, I like to use all the same cuts of chicken so they all cook the same. Dip the chicken pieces in the milk and egg mixture to coat than place the chicken in the resealable bag with the flour mixture. Shake to coat. If desired, you can prepare all of the chicken pieces to fry, however, do not add too many chicken pieces to your oil so you don’t overcrowd it.
  4. Fry the chicken pieces for about 10 minutes or until the chicken is fully cooked through.
  5. To make the sourdough start combine the flour, water and yeast together. Loosely cover and let it sit out over night.
  6. To make the waffles, combine the sourdough start with the remaining waffle ingredients (yeast, eggs, sugar, milk, oil, and salt). Using a large wooden spoon or spatula, stir just until everything is combine. Adjust the amount of flour (if needed) to create a batter consistency.
  7. Let the waffle batter rest for about 20 minutes. After the batter has rested, follow your waffle iron directions for the amount of batter needed and time for cooking.
  8. Serve your delicious sourdough waffles and fried chicken with your favorite syrup or gravy. I used real maple syrup on my tv show.
