Brownie Stuffed Chocolate Chip Cookies

Brownie Stuffed Chocolate Chip Cookies

  • 4 dozen small brownie squares
  • 1 pound butter, room temperature
  • 2 cups brown sugar
  • 1 ½ cups sugar
  • 3 eggs
  • 1 tsp salt
  • 1 tbsp baking soda
  • 2 tbsp vanilla
  • 1 package semi sweet chocolate chips (about 3 cups)
  • 6 cups flour
  • 1 ½ cup chopped walnuts (optional)

Directions:

  1. Bake up your favorite brownie in a 9x13 pan. let it cool, and remove them from from the pan and onto a cutting board. Cut all the way around the brownies, removing the hard crust.
  2. Once the crusts are removed, cut the remaining brownies into strips about 3/4 of an inch thick. Turn the brownie strips sideways and cut them into about 3/4 inch squares. Set aside until ready to use.
  3. Cream together butter and sugars for about 3 minutes.
  4. Add the eggs one at a time and completely incorporate the egg before adding the next one.
  5. Add the salt, baking soda, and vanilla and blend into batter. Be sure to scrape the sides of the bowl to incorporate all of the ingredients.
  6. Add the flour and chocolate chips into the batter and mix just until everything pulls together into a dough.
  7. I used a size 40 portion scoop on air to portion out 12 portions of chocolate chip cookie dough.
  8. With the flat side of the cookie dough up, gently flatten the dough in the palm of your hand and place a brownie square into the center of the dough.
  9. Carefully fold the dough up and around the brownie piece and if needed roll the dough in your palm to make sure it is round again before placing back onto a parchment lined baking sheet.
  10. When all twelve cookie portions are “stuffed” with the brownie squares, place a sheet of parchment paper over them and fit another cookie sheet over top. Gently press the dough down to flatten it.
  11. Place the prepared cookies into a preheated 350 degree oven for about 13 minutes or until they just begin to brown.
  12. Remove the cookies from the oven and let them cool on the cookie sheet. Once cooled, remove and place them on the counter while you finish the rest of the cookies. Serve and Enjoy!
