Braised Beef Chuck Short Ribs

Ingredients:

  • 1 large onion, chopped
  • 4 garlic cloves, minced
  • 4-6 beef chuck short ribs
  • 4-6 cups beef broth
  • 1/3 cup brown gravy mix
  • 10 medium size Klondike Potatoes
  • 6-8 carrots, peeled and sliced in half
  • Olive oil
  • salt and pepper to taste

Directions:

  1. Place your pressure cooker on the stove with the lid removed and heat the pan.
  2. Add enough olive oil to lightly coat the bottom of the pan.
  3. Add the onion and sauté until fragrant, about 5 minutes.
  4. Add the garlic and sauté for an additional minute.
  5. Add the beef chuck short ribs and cover with beef broth. Stir in the brown gravy mix.
  6. Place the lid on the pressure cooker according the manufactures instructions and bring the pressure cooker to pressure. Adjust the stove heat to maintain pressure and cooke the beef chuck short ribs for about 50 minutes or until fork tender.
  7. While the beef ribs are cooking, place the potatoes in a large pot and cover with cold water. If needed, peel and slice the potatoes into smaller pieces so they cook faster.
  8. About the last 10 minutes of boiling the potatoes, add the prepared carrots and cook them just until they are tender.
  9. Drain the potatoes and reserve 1 cup of potato water. Remove the carrots from the potatoes. Add butter and cheese to the potatoes if desired and mash them.
  10. To plate the dish, place a spoonful of mashed potatoes into the center of your plate and carefully top the mashed potatoes with a braised beef chuck short rib and two carrots. Spoon about 1/2 cup of gravy dripping from the top and let it pool onto the plate. Serve with your favorite salad, artisan bread and enjoy!
