Biscuits and Pork Gravy, Sunny Side Up Eggs with Cantaloupe Parfait

Baking Powder Biscuits

  • 3 cups all purpose flour
  • 3 tbsps Baking Powder
  • 1/8 cup sugar
  • 1 ½ tsps salt
  • 1 stick butter
  • 1 egg
  • 1 cup milk (more or less)

Pork Sausage and Gravy

  • 1 lb pork sausage
  • ¾ cup flour
  • 1 can evaporated milk
  • 2 cups milk
  • 1 tsp sage
  • Salt and pepper to taste

Sunny Side Up Eggs

  • 1-2 eggs, or as many as needed
  • 1-2 tbsp water
  • salt and pepper to taste

Cantaloupe Parfait

  • 1 cantaloupe, peeled, seeded and cut into inch pieces
  • 1 cup cherry tomatoes
  • 3-4 ripe plums
  • 1 cup vanilla yogurt, I used Greek style yogurt


  1. How to make the Biscuits: Combine all dry ingredients into a bowl and mix together.
  2. Cut cold butter into dry ingredients until it resembles corn meal
  3. Add just enough milk to pull powder mixture into a soft dough.
  4. Roll out onto a floured surface.
  5. Cut into biscuits.
  6. Bake in a preheated 350 degree oven for 15 minutes or until golden brown.
  7. How to make the Pork Sausage and Gravy: Cook pork thoroughly in a large sauté pan.
  8. Sprinkle the flour over the cooked pork and let it soak into the rendered pork fat. Stir for about 1 minute. Be sure flour is well incorporated with the pork.
  9. Add the evaporated milk and the 2 cups of milk, bring to a boil. Reduce heat and simmer for about 10 minutes. Stir frequently.
  10. Serve over freshly made biscuits.
  11. How to make the Sunny Side Up Eggs: Heat a small non stick pan on the stove and spray it with vegetable spray.
  12. Crack one to two eggs into the prepared pan. Let the white portion of the eggs set and then add one to two tablespoons of water to the pan and cover with a lid or a large piece of aluminum foil so the egg can steam and finish cooking. Cook to your desired doneness and serve over the biscuits and gravy.
  13. To Prepare the Cantaloupe Parfait: Place the prepared cantaloupe in a large bowl with the cherry tomatoes and plums. Fold the vanilla yogurt into the cantaloupe, tomatoes, and plums. Chill and serve as needed.
