Beef Kebabs with Avocado Tzatziki Sauce

Beef Kebabs with Avocado Tzatziki Sauce

Ingredients:

  • 1 cup fat free plain Greek yogurt
  • 1 avocado
  • 1/2 medium cucumber, peeled and cut into large chunks
  • 1 tbsp chopped fresh mint
  • 1 tbsp fresh lemon juice
  • 1/8 tsp salt
  • 1 pound extra lean ground beef
  • 1/4 tsp garlic powder
  • 1/2 tsp dried oregano
  • 1/2 tsp ground cumin
  • 1/2 tsp onion powder
  • 1/2 tsp freshly chopped rosemary
  • 1/4 tsp salt
  • 1/8 tsp pepper

Directions:

  1. In the bowl of your food processor blend the yogurt, avocado, cucumber, fresh mint, lemon juice and 1/8 tsp salt until smooth. Use immediately or cover and refrigerate.
  2. In a medium bowl, using your hands or a spoon, combine the kebab ingredients. Divide the mixture into 12 portions. Shape each portion into an oblong patty on the end of a 6 inch skewer. Transfer the skewers to a large plate of baking sheet.
  3. Lightly spray a grill pan or large skillet with cooking spray.
  4. Cook the skewers for 5 to 7 minutes, or until the beef is no longer pink and the beef juices run clear, turning on all sides for even browning. Transfer to serving platter.
  5. Spoon the sauce over the skewers or spoon it into a bowl for dipping.
