BBQ Meatballs

Ingredients:

  • 2 cups sugar
  • 1 cup water
  • 1 red bell pepper, sliced
  • 1 green pepper, sliced
  • 1 medium onion, sliced
  • 1 bottle prepared BBQ sauce
  • 1 package prepared meatballs
  • salt and pepper to taste

Directions:

  1. Preheat the meatballs as directed on the package by the manufacturer and keep them warm. You can certainly make your favorite meatball recipe if desired.
  2. Place the sugar and water in a large pot on the stove and bring it to a boil. Allow the sugar syrup to boil for about 5 minutes.
  3. Add the sliced bell peppers, and onions. Allow the mixture to boil for an additional 2-3 minutes.
  4. Add the bottle of prepared bbq sauce to the pot and stir to incorporate. Bring the mixture back to a boil and reduce the heat to a simmer or low boil. Allow the bbq sauce to continue cooking for an additional 10 minutes.
  5. When the sauce has thickened up from reduction and caramelization, transfer the preheated meatballs to a large bowl and pour the bbq sauce over the meatballs. Gently toss to coat the meatballs. Transfer to a serving dish and if desired garnish with fresh grape tomatoes for color. I like to have a small dish of toothpicks to the side so your guests can easily skewer and meatball. Enjoy!
