Bacon Mushroom Mac and Cheese

Bacon Mushroom Mac and Cheese

Ingredients:

  • 6 ounces whole wheat corkscrew pasta
  • 3 slices turkey bacon, cooked and chopped
  • 2 tsp virgin olive oil
  • 1/2 medium onion, diced
  • 2 tsp minced garlic
  • 2 cups sliced mushrooms
  • 2 tbsp dried Italian herb blend
  • 1/2 tsp black pepper
  • 3 tbsp water
  • 1 cups fat-free plain Greek Yogurt
  • 3 tbsp shredded mozzarella cheese
  • 3 tbsp Italian style bread crumbs
  • 1 tsp extra virgin olive oil

Directions:

  1. Preheat oven to 400 degree’s F.
  2. Boil pasta according to package directions, omitting oil, butter and salt. Reserve 1/4 cup pasta water after pasta is done cooking.
  3. Cook turkey bacon in a large sauté pan until fully cooked.
  4. Add the diced onion, mushrooms and garlic to the sauté pan with the cooked turkey bacon. If needed, add additional olive oil. Sauté the mixture until the onions are caramelized and the mushrooms have cooked down.
  5. In a separate bowl, combine the yogurt and cheeses and mix together. Add the yogurt mixture, pasta water and pasta to the mushroom mixture and stir to combine all ingredients.
  6. Remove from the heat and transfer to an oven safe baking dish you have lightly sprayed with vegetable spray.
  7. Combine the breadcrumbs, tbsp dried Italian herb blend and 1 tsp of extra virgin olive oil and mix together and sprinkle evenly over the top of the mac and cheese. Bake for 10 minutes and serve. Enjoy!
