Artichoke Salad

Artichoke Salad

Ingredients:

  • 3 - 9 ounce packages frozen artichoke hearts, thawed
  • 1/4 cup extra virgin olive oil
  • juice from one lemon
  • 1 1/2 tsp Italian Seasoning, no sodium
  • 1 tsp dijon mustard
  • 1/8 tsp ground black pepper
  • 1 1/2 cups finely chopped basil leaves
  • 2 tbsp chopped black olives
  • 1/4 cup sliced red onion
  • 1 red bell pepper, seeded and chopped
  • 1 medium tomato, chopped

Directions:

  1. Prepare the artichoke heart: Add artichoke hearts to a heavy duty medium pot with 3 cups of water. Bring to a boil over high heat, cover and reduce heat to medium high. Let artichokes simmer until fully cooked. Drain artichokes in a colander and run cold water over them to cool. Drain thoroughly.
  2. Meanwhile, make the dressing in a large serving bowl, add the oil, lemon juice, Italian seasoning, mustard, salt, and pepper. Whisk everything together to combine.
  3. When the artichokes are cooled, add them to the dressing. Carefully stir to combine.
  4. Add remaining ingredients into the bowl. Stir together to combine and serve immediately or chill in the refrigerator for a few hours. Enjoy!
