Apple and Walnut Chicken Salad with a Green Salad

Apple and Walnut Chicken Salad with Green Salad

For the chicken salad:

  • 1/4 cup fat-free, plain yogurt
  • 1 tbsp light mayonnaise
  • 1/4 tsp salt-free, dried Italian spice blend
  • 2 cups skinless, shredded chicken breast of a rotisserie-cooked chicken
  • 3 tbsp chopped, unsalted, walnuts
  • 1/2 cup sugar-free dried cranberries (can use fresh grapes)
  • 1 apple, cored and finely diced

For the green salad:

  • 1 head lettuce, cut into bite-size pieces
  • 1 cucumber, peeled, deseeded and finely diced
  • 1 large tomato, deseeded and diced
  • 1 tbsp extra virgin olive oil
  • 1 tbsp fresh lemon juice


  1. For the chicken salad, combine the yogurt, mayonnaise and spice blend in a large bowl withe a fork.
  2. Add the shredded chicken, nuts, dried fruit or grapes and chopped apple. Stir to combine.
  3. For the green salad, combine the chopped lettuce, cucumber and tomato in a large bowl.
  4. Add the oil and vinegar, toss to combine the salad.
  5. Serve the salad greens with the chicken salad on top.
