Apple and Pear Fruit Pinwheels

Ingredients:

Pie Dough:

  • 1 cup shortening
  • 3 cups flour
  • 1 tsp salt
  • 1 cup cold water

Filling:

  • 2 apples
  • 2 ripe pears
  • 1 cup sugar
  • 3/4 cup flour
  • 2 tsp salt
  • 1/4 cup fresh lemon juice
  • 1 tbsp pumpkin pie spice

Directions:

  1. Preheat your oven to 350 degree’s Fahrenheit.
  2. For the dough: In the bowl of your food processor add the shortening (You can use any kind of fat your choose butter, lard, shortening, olive oil) flour and salt.
  3. Pulse the food processor to cut the fat into the flour. When small pieces of fat and flour are created, transfer the flour mixture to a large bowl and add the cold water. Using a fork, carefully mix together until a soft dough is formed. Adjust the water if needed.
  4. When the dough is formed transfer it to your work surface and gently mold it into a ball.
  5. Divide the dough in half.
  6. Flour your work surface and roll half of the dough into a rectangle as if you were making cinnamon rolls.
  7. To create the filling: Change the food processor from the blade to the shredder. Shred the apple and pears. Transfer the shredded fruit to a large bowl and add the sugar, flour, salt, lemon juice and pumpkin pie spice. Mix everything together until combined.
  8. Divide the fruit mixture in half and spread half of the mixture along the long edge of the rectangle dough you rolled out earlier. Make sure the rolled out dough is well floured so it doesn’t stick to your work surface.
  9. Roll the prepared fruit into the dough like you would cinnamon rolls. Once rolled up, cut into pinwheels like you would cinnamon rolls. Place the cut pinwheels onto a silpat or parchment lined baking sheet.
  10. You should be able to fit about a dozen prepared pinwheels on a the baking sheet.
  11. Repeat the procedure with the other half the dough and shredded fruit mixture.
  12. When you are ready, transfer the prepared pinwheels to the preheated oven and bake for about 45 minutes or until they begin to brown. Everyones oven is different so adjust cooking times as needed.
  13. Remove from the oven and serve them warm. On my tv show, I served them on fresh apple sauce with a scoop of vanilla ice cream on top drizzle with caramel sauce. Enjoy!
