Angel Food Cake

Ingredients:

  • 1 cup flour, self-rising flour
  • 1 1/2 cups sugar
  • 12 egg whites
  • 1 tsp cream of tartar
  • pinch of salt
  • 2 tsp vanilla extract
  • 2 tsp fresh lemon juice

Directions:

  1. Combine the flour with half of the sugar and set aside.
  2. Whip the egg whites with the cream of tartar and salt until they have tripled in volume. Gradually add the remaining sugar and beat the eggs whites to a medium peak.
  3. Sift the flour and sugar mixture into the whipped egg whites. Add the vanilla and lemon juice and fold the mixture together.
  4. Pour angel food cake into a tube pan and bake in a 325 degree oven for approximately 45 minutes or until cake is golden brown and cooked through.
  5. Remove the cake from the oven and invert the cake to cool. If the cake falls out of the pan when cooling, it's undercooked. If this is the case, adjust the cooking times for your oven.
