Rotisserie Beef Roast

Recipe Courtesy Chef Bryan Woolley

 Ingredients:

  • 1 3-4 pound beef roast (chuck or round)
  • 1 medium size onion
  • 3 onion cloves
  • 1 tbsp prepared steak rub (like Montreal Steak Seasoning
  • 2 tsp ground cumin
  • 2 tbsp olive oil
  • salt and pepper to taste

Instructions:

  1. Combine the onion, cloves, prepared steak rub, ground cumin, olive oil, salt and pepper into the bowl of a food processor.  Set aside until ready to use.
  2. Using a sharp knife, poke about 6-7 holes into the roast randomly.
  3. Rub the prepared marinade all over the roast and push it down in the holes you poked in the roast.
  4. Place the roast on the rotisserie and cook.  Remember, when you are cooking a beef roast on a rotisserie, you can carve off the meat when the desired doneness is reached.  Continue carving/cooking and serving as needed.  Enjoy!
